Soybean Succotash

Green, shelled soybeans taste a lot like lima beans in this new version of an old standby. It’s easy to make and a good way to start using soybeans.

Preparation facts

Yield: 4 servings

Ingredients

4 cups (800g) frozen or fresh corn kernels (niblets)

1 1/2 cups (300g) soybeans (fresh or frozen shelled beans, often called “edamame”)

1/2 cup (100g) red pepper, chopped

Directions

Combine all ingredients in a saucepan with 1/2 (120mL) cup water. Bring to a boil and cook over medium heat for 5 minutes. Serve as a side dish with just about anything!

Makes 4 servings.
